/RMX rub- mushroom- garlic- sandwich- chipotle aoili/ (n)

Chef Khoran hit a homerun with this MLT sandwich! Make sure to add this sandwich to your rotation, because it is jammed with flavor and nutrition.

Ingredients:

6 oz of portabello mushroom caps (3-4 caps)

4-5 garlic cloves, minced

4 tbsp of olive oil

4 tsp ancho chili powder

2 tbsp of RMX Rub 

3-4 sprigs of thyme, minced

salt & pepper to liking

2 slices of bread of liking

adobo in chipotle sauce

1 large tomato, sliced

i head of Butter lettuce (Bibb, Boston), teared

12 c of mayo

2 tbsp butter, softened

Directions

 

1. Preheat oven to 400 Degree and grab the below supplies:

  • baking tray, 2 small bowls, frying pan, a knife, spoon, & cutting board 

 

2. Mince the garlic & thyme and add it to a small bowl. Lightly clean the mushrooms, making sure to remove the gills.

3. Add salt, pepper and olive oil to the  small bowl and stir.

 

4. Slather the oil mixture on every ounce of each mushroom and spread them out on a from baking tray.

3. Bake for 15-20 minutes, turning the pan every 10 minutes. The oven will dry out the mushroom.

4. Remove the mushroom from oven and sprinkle both sides with 1/4 tsp  of the RMX rub.

5. Warm a frying pan to medium heat and get ready to toast your bread. Butter  one side of your bread and toast it until it's lightly browned! The side not toasted will be home to you sandwich ingredients. 

6.  Rinse the tomato & lettuce; Slice the tomato 1/4 " thick and tear the butter lettuce leaves.

7. Grab a small bowl, add and mix together mayo, chipotle sauce & optionally 1 diced {seeded or unseeded} adobo.

8. It's Sandwich time!! Take your toast and lay it on it's toasted side to begin laying your chiptole aoili, lettuce, tomato, and candied mushroom (or bacon).

9. Eat or take extra time to cut it in half....Nawww just eat it!
